You need to try these chicken kofta bowls! They are so easy, nourishing and DELICIOUS. The chicken koftas cook in the oven in 20 minutes or the air fryer in 15 minutes. Save this for your midweek dinner inspo. Hope you enjoy!
Chicken Koftas:
500g chicken mince @butcher_crowd
2-3 garlic cloves, crushed
1 egg
1/4 cup fresh parsley, finely chopped
1 tablespoon lightly dried basil
1/2 cup breadcrumbs
Zest of 1 lemon
Salt and pepper
Toppings.
1 small Lebanese cucumber, sliced
1/2 cup wholemeal couscous
2 tablespoons kalamata olives
2 tablespoons hummus
Wedge of lemon
Sprinkle of fresh dill
Preheat your oven to 200 degrees fan forced and line a tray with baking paper. Make the chicken koftas by combining the chicken mince, egg, parsley, basil, breadcrumbs, lemon zest, salt and pepper in a bowl. Mix with your hands until fully combined. Using two tablespoons make an oval shape with the kofta mix and place on the baking tray evenly. Cook for 20 minutes or until cooked through. Meanwhile, cook the couscous in a heat proof dish by covering with boiling water and a tea towel. Let it sit for 5-8 minutes then fluff up with a fork. Serve the koftas with couscous, cucumber, hummus, olives, lemon and fresh dill. Enjoy!
