This is my ultimate banana bread, so soft and gooey with those little melted chocolate chip bits. And it's made with only one bowl... yay for less cleaning up & more time to enjoy a cuppa & a slice of this deliciousness. Save this one for your next baking adventure. x
Choc chip banana bread recipe
Makes one loaf or ~8-10 slices
Time: 60 minutes plus cooling time
What you need: 3 ripe bananas
1/2 cup brown sugar
1 egg, whisked
1 teaspoon vanilla bean extract
4 tablespoons melted butter, then cooled
1 teaspoon baking soda
1 pinch of sea salt
1.5 cups plain flour
1 cup milk chocolate chips
How to: Preheat your oven to 180 degrees fan forced. Line a loaf pan with baking paper & set aside. In a large bowl, mash the bananas with a fork. Add the wet ingredients; cooled melted butter, egg & vanilla bean paste & mix until combined. Now add the dry ingredients; plain flour, brown sugar, baking soda & sea salt. Mix until smooth with no lumps. Add in 3/4 of the choc chips and stir through. Pour batter into your lined loaf pan & sprinkle the top with the remaining choc chips. Bake for ~50 minutes or until cooked through (check the centre with a toothpick). Cool for ~10-15 minutes before slicing & serving.
