These Greek-style chicken bowls are so fresh and full of delicious Mediterranean flavours. It has some of my favourite things like salty olives, bursting cherry tomatoes, creamy feta cheese and homemade tzatziki. The chicken cooks in the oven, is ready in 25 minutes and is so tender and juicy. I hope you enjoy this as much as we did!
Serves 2
450g chicken tenderloins
1/2 cup Greek yoghurt
2 tbs extra virgin olive oil
1 tsp dried oregano
1 tsp smoked paprika
1 Lebanese cucumber, sliced
1 1/2 cups cherry tomatoes, halved
1/2 red onion, finely sliced
4 tbs Kalamata olives
1/2 cup feta, crumbled
Handful fresh parsley, chopped
2 cups basmati rice, cooked (or microwave rice)
Juice of 1 lemon
Homemade tzatziki:
1 cup Greek yoghurt
2 small lebanese cucumbers, grated
1 clove garlic, crushed
2 tablespoons extra virgin olive oil
Pinch of salt
Optional: you can add fresh herbs like dill, parsley or mint
Coat the chicken in yoghurt, olive oil and oregano and place onto a baking tray. Bake on 200 degrees fan forced for 20-25 minutes or until cooked through. Make the tzatziki in a small bowl. Serve chicken with cooked rice, cucumber, cherry tomatoes, red onion, olives, feta, tzatziki and parsley. Enjoy!
