Per bowl:
1/2 cup brown rice
1/2 cup canned black beans, rinsed
3 tbs grilled corn
1/2 cup cherry tomatoes, halved
1 cup cos lettuce, shredded
1 scotch fillet steak
1 tsp smoked paprika
1 tsp garlic powder
1 tsp cumin
salt and pepper
guacamole: avocado, red onion, tomato, coriander, lime juice
Season the steak with smoked paprika, garlic powder, salt and pepper. Cook to your liking, rest and slice. Build your bowl with brown rice, black beans, grilled corn, cherry tomatoes and lettuce. Add the steak and guacamole on top and serve with lime. Enjoy!
