With Spring time in full swing, it's time for more fresh salads & veggies. Our bodies naturally swing to wanting more lighter meals and less of the cozy stuff. This salad is such a delicious classic... pear, parmesan & rocket salad. I love adding fresh fruit to salads for an extra burst of flavour & crunchy texture. And who doesn't love a bit of parm? x
Pear, parmesan & rocket salad recipe
Serves 2
Time: 10 minutes max
What you need:
4 cups or ~100g rocket leaves
1/4 cup shaved parmesan cheese
1 medium pear, thinly sliced
2 tablespoons pine nuts, toasted
2 tablespoons balsamic vinegar
1 tablespoons olive oil
Salt & pepper
How to:
Toast the pine nuts in a small pan over low heat until golden & then set aside to cool down. Make the balsamic glaze dressing by combining balsamic vinegar, extra virgin olive oil, salt & pepper in a jar & shake well until combined. In a medium serving bowl add the rocket leaves, sliced pear, toasted pine nuts & parmesan cheese. Drizzle with balsamic glaze dressing & mix to combine. Now time to enjoy! x
