Mediterranean Baked Salmon
Serves 2
2 x Salmon fillets (skin off)
1 tsp smoked paprika
1 tsp oregano
2 cloves garlic, finely sliced
1 cup medley of tomatoes, halved
1/4 cup Sicilian olives, halved & pitted
Squeeze of half a lemon
2 tablespoons extra virgin olive oil
Sprinkle salt and pepper
Optional: 1/2 cup chopped parsley to serve
Preheat your oven to 200 degrees fan forced. In a medium sized baking tray add the salmon fillets and coat with smoked paprika, oregano and sliced garlic. Top with chopped tomatoes, Sicilian olives, olive oil, lemon juice, salt and pepper. Bake for 15-20 minutes or until cooked through. Serve with fresh parsley on top and a side of crusty bread to dip into the sauces, enjoy!
