This was really a throw together salad of whatever I had left in the fridge/pantry! You know those days where going to the shops seems like a huge effort?! To my surprise this roasted sweet potato salad turned out totally delicious and really hit the spot... so I thought I’d share the recipe with you guys. Happy cooking x
Roast sweet potato salad with honey mustard dressing recipe
Serves: 4 as a side
Time: 40 minutes
What you need:
4 cups mixed salad leaves
1 large sweet potato, roughly chopped
1/2 avocado, diced
1 can of four beans, rinsed
1 tablespoon of sunflower seeds
Honey mustard dressing:
1 tablespoon dijon mustard
1 tablespoon wholegrain seeded mustard
2 tablespoons honey
1 tablespoon white wine vinegar
1 and 1/2 tablespoon extra virgin olive oil
Salt & pepper to taste
How to: Roast the sweet potato in the oven on 180 degrees for 30 minutes with a little extra virgin olive oil, salt and pepper. Once sweet potato is toasty, set it aside to cool slightly. In a large bowl, place the mixed salad leaves, avocado, four beans and sunflower seeds, mix to combine. Make the honey mustard dressing in a jar and shake up ingredients until combined. Now add the cooled roast sweet potato into the salad, drizzle the honey mustard dressing over the top and enjoy!
