Satay Chicken Bowls

One of my favourite bowls to make has to be this satay chicken bowl. This drool-worthy sauce is made with only 3-ingredients. It’s delicious, quick and easy, ready in under 20 minutes. Save this for your next balanced and tasty meal.




Satay Chicken Bowls

500g chicken thighs

Peanut sauce:

4 tablespoons peanut butter

2 tablespoons red curry paste

1 can coconut milk


Serve with:

Brown rice

Cucumber

Carrot

Fresh lime


In a large bowl make the peanut sauce by mixing the peanut butter, coconut milk and red curry paste. Cut the chicken thighs into small pieces and coat in half of the sauce. Put the chicken pieces onto the skewers and cook in a hot pan for 3-5 minutes on each side or until cooked through. Heat up the remaining peanut sauce in a saucepan. Serve the skewers with peanut sauce on top/on the side to dip. Serve with brown rice, cucumber, carrot and fresh lime. Enjoy!
