You guys were loving this one on my instagram feed. Here is the recipe for all of you who have asked! It's a super fresh & delicious take on a Greek salad & is way more filling with the addition of risoni (orzo). The little risoni pieces soak up all of the zesty lemon dressing & really intensifies the flavour. You will definitely be making friends with this salad!

Super Greek salad recipe
Serves 4
Time: 20-25 minutes
What you need:
1/2 cup risoni
2 green cucumbers, diced
1.5 - 2 cups medley of tomatoes, cut into halves
1 green capsicum, diced
1/4 red onion, thinly sliced
1/2 cup pitted kalamata olives
1/4 cup marinated green olives with chilli
1/4 cup marinated feta cheese
1.5 tsp dried oregano
Lemon dressing
3 tablespoons extra virgin olive oil
1 lemon juice & zest
2 cloves garlic, crushed
1.5 tsp dijon mustard
Salt & pepper to taste
How to:
Bring a medium saucepan of water to the boil and cook risoni as per packet instructions (10 mins for al dente). Drain & set aside to cool. Meanwhile prepare all of the veggies, chopping them up & placing them into a large serving bowl. Make the lemon dressing by combining all of the dressing ingredients & shaking them together in a jar until well combined. Add the risoni, olives & feta cheese to the veggie bowl & mix to combine. Drizzle with the lemon dressing & toss together until evenly combined.
