These taco crunch bowls are healthy, satisfying and DELICIOUS! I’m literally obsessed with this bowl. I could eat this every week. You can prep the taco mix and then just add anything else you like before serving.
Taco mix:
500gb beef mince
1 brown onion, diced
1 can black beans, rinsed
1/2 cup water
2 tablespoons taco seasoning*
Taco seasoning:
1 tablespoon cumin powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon oregano
1 tablespoon smoked paprika
Sprinkle of salt
Toppings (per bowl):
1 cup cos lettuce, shredded
1/2 cup brown rice
1/2 tomato, diced
1/4 red onion, diced
3-4 corn chips, crushed
1 heaped tablespoon guacamole:
1 avocado, mashed
1/4 red onion, diced
1/2 tomato, diced
2 tbs coriander, chopped
1/2 lime juice
Optional: sour cream or mayo drizzle
In a large saucepan, make the taco mix by browning the onion and beef mince for ~8-10. Add the taco seasoning and cook for 2-3 minutes. Add the water and black beans, cook for a further 3-5 minutes. Make the guacamole by combining avocado, red onion, tomato, coriander and lime juice, or you can use store-bought. Assemble the bowls with lettuce, brown rice, taco mix, crushed corn chips, tomato, red onion and guacamole. Enjoy!
